Windy City Smokeout’s 2018 BBQ lineup features the world’s best Old School and Generation Next pitmasters who will be smoking and grilling both regional specialties and new-school flavors that go beyond the boundaries of traditional ‘cue.
This year’s festival first-timers joining the returning pros include Hometown Bar-B-Que from Brooklyn, LeRoy and Lewis from Austin, Home Team BBQ from Charleston, South Carolina and Feges BBQ from Houston, plus legendary Louie Mueller Barbecue from Taylor, Texas.
Here’s why we’re excited to welcome these new all-stars to the 2018 Windy City Smokeout!
The Roots: Red Hook, Brooklyn, NYC
The Style: Pit-smoked meats prepared in the classic Southern technique of smoking on oak wood; a variety of flavor profiles are incorporated to represent the local communities of Red Hook, Brooklyn.
The Pitmaster: Billy Durney is a self-described street kid from Brooklyn who, along the 20-year journey of providing security and private protection for some of the country’s most public figures, found the religion of Texas BBQ. Fast-forward years of traveling the world and perfecting his technique, Billy has fulfilled his lifelong dream by taking the helm as pitmaster / owner of Hometown Bar-B-Que.
Smokeout Offerings: Pastrami Bacon Roll; Smoked Beef Rib Bao
The Roots: Charleston, SC
The Style: The simplicity of slow-cooked meats and comfort food of the South are fused with the fundamentals and processes of classical cuisine
The Pitmaster: Spending the bulk of his early culinary career in white tablecloth restaurants, Aaron “Fiery Ron” Siegel returned from stints in NYC and Aspen to perfect his meat-smoking technique in the South. The first Home Team opened in 2006 in downtown Charleston and three other locations have since followed.
Smokeout Offerings: Chile-brushed Tri Tip Tacos; Fried Ribs; Summer Pea Salad to cool things off
The Roots: Austin, TX
The Style: New-school barbecue meets old-school service; alternative cuts of meat using seasonal ingredients sourced from local farms and ranches are served from the LeRoy and Lewis food truck; the brick-and-mortar restaurant, brewery and event space is forthcoming
The Pitmaster: Evan LeRoy’s resume includes NYC’s Hill Country Barbecue, Hudson’s On The Bend and celebrated Austin spot, Freedman’s before branching out on his own. The Travel Channel has dubbed him the “Austin Grill Master” and Food Network lauds his ‘cue.
Smokeout Offerings: Smoked Al Pastor Tacos with Pineapple Pico; Smoked Tri-Tip Tacos with onion, cilantro and queso fresco; Sambal Cucumber Salad
The Roots: Houston, TX
The Style: Traditional BBQ flavors combined with modern interpretations of the classics
The Pitmasters: Husband-and-wife team Erin Smith and Patrick Feges bring fine dining pedigrees and years of BBQ expertise to Feges BBQ, which opened in March 2018 in Houston. Known as the community’s “Whole Hog Guy”, Feges is a self-taught pitmaster and Purple Heart recipient.
Smokeout Offerings: Beef Belly Burnt Ends; Chicken Legs with White Sauce
The Roots: Taylor, TX
The Style: Central Texas Style BBQ – a.k.a the best BBQ in Texas (which means the best in the world)
The Pitmaster: Third-generation pitmaster and James Beard award-winner Wayne Mueller has been ‘cueing since the tender age of 8 at his family’s iconic spot, Louie Mueller Barbecue. Described as the “Cathedral of Smoke”, this Texas institution has been in operation since 1949 and is recognized as one of the nation’s most beloved regional restaurants headed up by one of BBQ’s most legendary pitmasters.
