Doug Psaltis fell in love with barbecue while traveling to festivals up and down the East Coast with his brother, escaping the stresses of New York City-living every chance he got. Along the way he met three-time barbecue World Champion and man behind Jack’s Old South, Myron Mixon. Embracing the BBQ competition life and that of a pitmaster, Doug dreamed of opening his very own barbecue joint. Fast-forward a few years, and Bub City officially opened in Chicago in late 2012. Christian Eckmann, a local Illinois boy, grew up making and smoking sausages with his grandpa. Now a home-smoker guru, Eckmann dove headfirst into the BBQ life and is now the head pitmaster and official leader of Bub City and the Bub City Pit Crew.
